Su Nuraxi

Su Nuraxi is a cheese with a hard texture, half-cooked, half-mature, exclusively produced from very fresh sheep's milk coming from the Sardinian inland's pastures: one of the classical pecorino cheeses of the insular tradition.

It has a strong taste with a tendency to spicy, getting spicier when more mature. It has a characteristic rounded shape, dark-coloured rind and a medium weight of 3,3 kg. Its maturing varies from 20 days to six months.

It is the Prince of the Sardinian cheeses, very nourishing and digestible, unmistakably aromatic. It is excellent as table cheese, especially when sliced, warmed up in a frying pan with a little extra-virgin olive oil together with su pani carasau, the typical thin Sardinian bread.
