Aristeo is a table cheese, made using both fresh sheep and goat’s milk, both from the Sardinian countryside. The different types of milk enhance each other and create a variety of special aromas where one can find floral notes accompanied by the smell of endemic Sardinian plants. It is cylindrical in shape, with a curved outer edge, its weight is around 2.5 kg. Its paste is compact and can present small holes, its colour can vary from white to ivory depending on the period of production and/or maturing. Its flavour is delicate, elegant and balanced between the strong personality of sheep’s milk and the mildness and delicacy of goat’s milk. It is excellent served with sweet and savoury dishes, accompanied by a Moscato wine.
