Colline di Mandas (mature) is the oldest pecorino cheese produced by the Caseificio Garau (since 1880), excellent table cheese and to grate. Today as in the past, it is sold only after a careful and scrupulous maturing period. It has a characteristic strong-aromatic flavour, pleasantly piquant, with hints of undergrowth and dried fruits. It is cylindrical with flat sides, a straight outer edge and a weight of about 2.5 kg. Semi-cooked hard cheese, made using only fresh sheep’s milk from pastures of Sardinia’s countryside. The result of an maturing period of at least 6 months is a dense paste which evolves towards a pleasant piquancy. Its unique flavour is exalted when served with Civraxu, the typical Sardinian bread from the Trexenta region and with a good full bodied barrique wine.
