Granduca di Mandas

Granduca di Mandas is an excellent pecorino, to eat as table cheese or to be grated, made using fresh sheep’s milk from pastures of Sardinia’s countryside.
The making process is similar to the Parmesan cheese. The sharp flavour of the pecorino is characteristic, in contrast to the delicate taste in the mouth and hints of dried fruit and spices. The wheel is large and has an average weight of 16 kg. Its maturing requires about 5/6 months in the mild version and over 12 months for the mature one. An excellent table cheese, it can also be grated and used in a variety of recipes, where its delicate taste can evolve in a harmony of unique, savoury flavours. It is also excellent served with strawberry fruit honey.
