Colline di Mandas (mild) is a pecorino table cheese, made using only fresh sheep’s milk from pastures of Sardinia’s hinterland. It has a characteristic sweet-aromatic flavour, with hints of undergrowth. It is cylindrical with flat sides, a straight outer edge, and a weight of about 2.8 kg. Its maturing requires between 20 days and six months. It is characterised by a soft and dense straw-yellow paste and it becomes pleasantly piquant the more it matures. Its sweet and slightly acidic flavour, exalted in the first days of its maturing, makes it the main ingredient in the preparation of one Sardinia’s most traditional desserts: sebadas.
